This study identifies the composition and form, as well as the author, the year of writing, and the background to the compilation of Eumsikbo (飮食普). It also re-analyzes and considers the content, such as food names and recipes, by reading and interpreting the original text. As a result, the main author of Eumsikbo, and the exact number of items and characteristics of the food included were identified. In addition, the historical value of Eumsikbo was proved by revealing that Eumsikbo recorded ingredients and languages (dialects) derived from the locality of Honam, as well as unique recipes and food folk customs resulting from cultural differences.
