Abstract

The health of modern people is threatened by bad eating habits. In order to provide healthy desserts to people, we conducted a study on adding plum concentrate, which is effective for fatigue recovery, insomnia, and prevention of constipation, to scones. In order to examine the utility of scones made by adding plum concentrate, the following experiment was conducted. It was prepared by adding 0g, 3g, 5g, and 7g of plum concentrate to the scone dough, respectively. As a result of the test, the sensory characteristic value was the highest in the experimental group to which 5 g of plum concentrate was added (4.77). There was a significant difference in that the average value tended to increase as the concentration of the plum concentrate increased. As for fragrance, the experimental group with the addition of 5 g of plum concentrate showed the highest sensory characteristic value of 3.62, but there was no significant difference. The experimental group to which 3 g of plum concentrate was added showed higher preference than the control group in most items such as color, flavor, sweetness, and overall preference. This study suggests that the production of scones with plum concentrate has a high potential for commercial use.

Abstract

Honey was diluted with different percentages of water and was analysed rheologically at room temperature of 27&#x2103;. The rheological profiles of pure and impure honey samples were measured at low shear rates (0.01-4.16s<sup>-1</sup>). This work developed a structural kinetic model, which correlated well with the rheological data. The new model was used to categorise honey samples using their average molecular weights as one of the distinctive properties. Also, the kinetics order in the new model predicts the number of active components in the "honey" undergoing deformation. Honey produced third order kinetics to depict the monomers, oligomers and water content in honey. Pure honey exhibits peculiar non-Newtonian rheological behaviour. The behaviour of water is Newtonian. Dilution of honey with different percentages of water turns the resulting fluid Newtonian from 10% dilution with water. This study analysed the antibacterial activities of honey and serially adulterated samples against Staphylococcus aureus and Pseudomonas aeruginosa. The antibacterial analyses of honey were conducted using Kirby Bauer's well diffusion method. The results indicated that pure honey exhibited a zone of inhibition against both organisms. Also, the diameter of the zone of inhibition decreased with increasing dilution of honey, suggesting a correlation with the rheological method.

Abstract

Ginseng is described as the "King of all herbs, "Man-root" or "Root of heaven" and regarded as the most powerful herbal remedy, particularly grown in Korea, China, Japan, Vietnam, and North America. It has been in existence for a long time. The most demanded herbal cure, Ginseng, principally the root, has long been employed in traditional Asian medicine. The extent of availability of bioactive combinations and their impact on the body differs between American and Asian ginseng. Asian ginseng, also known as Panax ginseng, has a more calming influence and is more advantageous than American ginseng, such as Panax quinquefolius. The pharmaceutical aspect of development and extraction with diverse morphological properties is examined. Saponins, glycosides, carbohydrates, polyacetylenes, amino acids, vitamins, volatile oil, enzymes are all present in the Phyto-content of Ginseng. Ginsenosides are saponins that are constituents of the triterpenoid dammarane and have anticancer, anti-cardiovascular, anti-microbial, anti-obesity, anti-inflammatory, and antioxidant properties. Ginseng, in particular, has the possibility to help with microbial invasion, inflammatory processes, oxidative stress, and diabetes. It developed nanoparticles and nanocomposite film technologies as novel drug delivery platforms for cancer, inflammation, and neurological illnesses. Furthermore, it offers a range of applications that will be vital for future growth.
